Bought 2 racks from Kurt and could tell they were different than I've had as soon as I unwrapped them. They were trimmed to a level I could not do and the silverskin was removed.  I had to do nothing but season them.  
    They ended up being the best ribs I've ever made and now I LOVE ribs!  I've made 2 more times this week and the family loves them more each time.
